Vale d'Aldeia The grapes are hand‑picked into 20‑kg boxes at the ideal point of ripeness, resulting in higher aromatic and phenolic concentrations. After gentle crushing and complete destemming, the grapes are fermented in stainless‑steel mills equipped with a temperature‑control system. The wine matures for 18 months in new French oak barrels, followed by 6 months in bottle.
