This Alvarinho from Borras Finas certainly doesn't rush into things. The fermentation, utilising 50% of the must left on the lees, creates a wonderfully vibrant mineral tension, beautifully enhanced by the influence of French oak barriques. It’s a wine bursting with refreshing citrus notes and a hint of Atlantic salinity – a perfect partner for a generous portion of Bacalhau à Brás, wouldn’t you say?
