Van Zellers & Co A batch of more than 30 traditional Douro grape varieties, sourced from old vines and newer single-variety vines in Cima Corgo, mainly in the valleys of Rio Torto and Pinhão. The grapes are stomped by hand before and throughout fermentation. When the must is ready for the addition of wine spirit, the fortification is carried out in one go, adding all the spirit to the must and skins in the crush. A second stomp follows to ensure good homogenisation of the entire wine and to halt fermentation. The mixture of must and spirit remains in the crush for another one or two days, with a slight stomp twice a day (10 minutes each time). Then it is transferred to the storage vat together with all the pressed wine (we use traditional basket presses). The wines age in very old Port wooden barrels (over 100 years) for an average of 10 years. Tasting date upon request. Winemakers: Cristiano van Zeller and Joana Pinhão.
