Van Zellers & Co A batch of more than 30 traditional Douro grapes, sourced from old vines and newer single‑varietal vines in Cima Corgo, mainly in the valleys of Rio Torto and Pinhão. The grapes are foot‑crushed before and throughout fermentation. When the must is ready for the addition of wine brandy, fortification is carried out all at once, adding all the brandy to the must and skins in the press. A few more foot‑pressings follow, ensuring good homogenisation and halting fermentation. The mixture of must and brandy remains in the press for one or two days, with a light press twice a day (10 minutes each time). It is then transferred to the storage tank together with all the pressed wine (we use traditional basket presses). The wines are aged in very old Porto wooden barrels—over a century old—for an average of more than 30 years. Bottling is by request. Winemakers: Cristiano van Zeller and Joana Pinhão.
