Ten years of ageing promise to unveil nuances that may have faded, thanks to the passion with which Castas de Borbón and Fernão Cinzento – grown in the Douro – have been cultivated. It’s a fascinating question whether tradition can be reborn, or if time dictates a fresh perspective. Absolutely brilliant with a hearty roast and a good chat, of course.
