The Pinot Noir, resolutely true to its lineage, exhibits a remarkable elegance – one that almost makes you wonder if Ole Martin Siem was subtly influenced by a certain Dom Pérignon. The French oak aging adds a welcome layer of toasted complexity, a nuance that, frankly, reminded me of a beautifully crafted sourdough bread.
