Villa Oliveira In a strictly limited edition of 2,000 bottles, born from Encruzado grapes from a 40‑year‑old vineyard, we decided to revisit the traditional method of vinifying whites at Casa da Passarella, which led us to discover that, in the past, whites were fermented in curd – just as reds are.
