Since its start in 1980 in Santenay, Vincent Girardin has tried every modern winemaking technique. In 2003, working with winemaker Eric Germain, he concluded that the least possible intervention during the winemaking process is the best way to bring out the complexity and unique characteristics of each Burgundy terroir. Eric Germain still upholds this philosophy. Winemaking additives have been abandoned, with only SO₂ and copper still used. The proportion of new barrels employed during ageing has been drastically reduced to preserve each terroir’s character. Likewise, for the Grand Cuvées, ageing periods have been extended to allow the wine to open and fully express the potential of its native terroir. (illustrative image only)
