Description

Since beginning in 1980 in Santenay, Vincent Girardin has tried every modern winemaking technique. In 2003, working with his winemaker Eric Germain, he concluded that the least possible intervention during vinification is the best way to reveal the complexity and individual characteristics of each Burgundy terroir. Eric Germain continues to uphold this philosophy. Additives for winemaking have been abandoned, and only SO₂ and copper are now used. They have drastically reduced the proportion of new barrels used during ageing to preserve the character of each terroir. Meanwhile, for the Grand Cuvées, they have extended ageing periods to give the wine time to open and express all the potential of its terroir of origin. (illustrative image only)
