“This Vinho Paz is a remarkable white from the Dão region, a clear testament to generations of family tradition and the powerful granite terroir. The vines, aged between 34 and 64 years, are cultivated using a vertical monoplano system, yielding a modest 5.3 tonnes per hectare. The blend of Encruzado, Gouveio, Malvasia Fina, and Verdelho delivers a wine of considerable structure, expertly crafted by enologist António Canto Moniz. The initial taste is smooth, but the mouthfeel is truly impressive – a near-creamy texture and generous body that perfectly reflects the local granite. A fantastic pairing would be with fresh oysters or a simply grilled white fish.”
