Hungary's greatest white grape and the variety behind Tokaji — one of the world's most celebrated sweet wines. Furmint is naturally high in acid and prone to noble rot, making it ideal for the botrytised Aszú style. The grape is also being increasingly vinified as serious dry white, expressing volcanic-soil minerality, citrus, smoke and intense, age-worthy structure. Tokaj is the spiritual home; Slovakia produces a small amount across the border.
