When the harvest in the Dão finishes, only the grapes that will become this Colheita Tardia remain. It’s the season of autumn sun, the first rains and humidity, and the leaves in Santar take on such contrasting colours and patterns. Produced only in the best vintages, this wine is called *Outono de Santar*, evoking the unique magic of that time of year in the emblematic town of Santar. Aromas of butter, lightly toasted dried fruit, dry alder and citrus flowers. The palate is complex, with distinct freshness, silky texture and perfect balance. The finish is long and persistent. Casa de Santar is a 17th‑18th‑century estate in the Dão, surrounded by hedgerow gardens, boxwood and flower labyrinths. Its granite cellars, 400 years old, produce high‑quality wines. In 2007 the estate was named Producer of the Year by *Revista de Vinhos* and its wines have been awarded annually ever since.
