**A Cerca dos Frades** The Arinto variety of the Azores, exclusive to these islands, has become a viticulturist’s favorite for its resistance, productivity, and enological versatility. It shines especially in plots near the sea, making it the most widely cultivated variety in the region today. The wines it produces are marked by great freshness and a subtle salinity. **Origin:** This wine is made from grapes harvested from a single parcel within the Cerca dos Frades vineyard in Santa Luzia, on the north coast of Pico Island. **Vinification:** The harvest is hand‑picked and selected in 25‑kg buckets. The whole bunches are gently pressed, and the resulting juice is decanted after 12 hours of sedimentation.
