With grapes from the most typical Alentejo varieties grown in the Borba sub‑region, the Rótulo Cortiça wine is a true hallmark of the Adega de Borba. Harvested from old vines, the grapes were carefully monitored during ripening and taken in limited quantities. At the winery, after settling and gentle crushing, the wine underwent a 10‑15 day alcoholic fermentation at 24 °C to maximise the extraction of fruit aromas and flavours. To enhance its phenolic complexity, tannin profile and structure, the wine remained in a tank for post‑fermentation maceration. Malolactic fermentation followed in stainless‑steel vessels. For an elevated organoleptic profile, the wine was aged 12 months in 3rd‑ and 4th‑year French oak barrels and in exotic wood casks, then finished with 6 months of bottle maturation in the cellar. The aroma is fine and elegant, evoking dark fruit, compote and white chocolate.
