Albert Bichot Les Clos is, in terms of surface area, the largest of the Chablis Grand Cru vineyards. It enjoys a safe southeast exposure that catches the sunset. We own two plots totalling almost four hectares, letting us blend grapes with two very different but complementary profiles. The first plot sits halfway up the slope, benefiting from slightly warmer temperatures than the second, which is perched at the top, shielded from northern winds by the neighbouring forest. Both parcels again prove that Burgundy is the realm of terroirs: the mid‑slope plot delivers deeper, richer, more fleshy wines, while the top‑slope plot yields wines with higher acidity and tension. It is the blend of these two that imparts all the complexity to our Les Clos. Aging: 35 % in oak barrels for 10 months, followed by 6 months in stainless‑steel tanks (100 %). With fine lees.
