Description

Harvest begins in August, primarily at night using machinery and preferably in the mornings with manual picking. Upon arrival at the winery, the grapes are immediately destemmed and separated from the must, then pressed. A settling period of 24 hours preserves the freshness and varietal characteristics of the fruit. Fermentation follows at a controlled temperature of 18°C, with a minimum aging of 4 months in stainless steel tanks, after which the wine is filtered and bottled. This wine boasts a vibrant freshness and tropical fruit notes, perfectly complementing seafood dishes.
