This Sancerre from Alphonse Mellot clearly enjoyed a lengthy nap – a full 11 months spent dreaming in oak barrels. Following this extended slumber, it further matured for a further 12 months on skins, gently coaxing out its aromatic complexity. A truly classic Sauvignon Blanc, it’s brimming with vibrant acidity and herbaceous notes – a fantastic match for oysters or a refreshing cucumber salad.
