This Arbois DD seems to be taking a rather traditional route – a perfectly timed harvest, careful separation of Pinot Noir and Bastardo grapes, and a traditional fermentation that, we’re told, preserves the very essence of the fruit. The aging in inert tanks suggests a measured approach, avoiding any unnecessary fanfare. The result is a wine that promises to be smooth and perhaps a little reserved, underpinned by the characteristic robustness of the Bastardo. It’s a pairing that would certainly delight with cured meats and sheep’s cheeses – a combination that clearly appreciates a good dose of heritage.
