This “vin jaune” from the Jura, cultivated with almost a mystical devotion and without any chemical intervention, is a genuine puzzle. Produced in just 4,000 bottles a year and aged in 228-litre oak barrels – with the “angel’s share” adding a touch of honey and the remainder building complex layers – it’s consistently one of the world’s most coveted wines. Expect a flavour profile reminiscent of a Jerez, yet undeniably imbued with that distinctive Jura character, a truly remarkable experience. Wonderful with sheep’s cheeses and wild mushroom dishes.
