Virgin olive oil is obtained solely from the olive fruit through mechanical or other physical processes, under conditions that do not alter the oil and that involve no treatments beyond washing, decanting, centrifugation, and filtration. It excludes oils produced with solvents, chemical or biochemical adjuvants, re‑esterification processes, or any blending with oils of another nature. Once its authenticity is verified, virgin oils are classified by quality, falling into either “Extra Virgin Olive Oil” or “Virgin Olive Oil.” The Extra Virgin category denotes oils of superior quality, with a strong, fresh olive flavour and aroma, an acidity of 0.8 % or less, and no organoleptic defects.
