Crafted from meticulously selected Sangiovese grapes, pulled from some seriously ancient vines – you can practically hear the stories they’ve collected – it’s a testament to the producer’s patience. The “green harvest” technique, coupled with hours of the grape skins dancing in the juice, is a bold move. Finally, a second fermentation in an autoclave, with the yeast party lasting two months, delivers a burst of invigorating freshness. Absolutely brilliant with seafood and grilled fish – a true classic.
