The Mont de Milieu from Billaud‑Simon is one of the purest and most sophisticated expressions of AOC Chablis Premier Cru. This monovarietal Chardonnay comes from a single plot of less than 3 hectares of clay‑ and limestone‑rich soils, which give it striking mineralism and exceptional drainage. It is characterised by aromas of ripe citrus and white flowers, and on the palate delivers an enveloping texture thanks to its barrel maturation—a Premier Cru with great potential and persistence.
