BiniVista This wine is named after the Puig des Teix mountain, part of the Tramontana range. With its 1,062 metres, it is one of the highest and most impressive mountains on the island. Puig des Teix rises toward the sky just behind the village of Deià, which many consider the most beautiful place on the island. This was our first red wine produced, and we wanted to make it special yet easy to love, just like Deià. Our Garnacha vines are oriented toward this mountain at an angle of 296° relative to the cellar. **Vinification:** This year we decided to base it on Grenache, but with almost as much Callet, staying at least equal to the previous year. This decision was made early, during one of the first barrel tasting sessions; during the final tasting before blending, we added that small but important touch of magic in the form of 3 % exuberant, fruit‑rich Merlot. Stainless‑steel tank stage (Grenache): Oct 2021 – Oct 2022. Oak barrel stage (Callet): Oct 2021 – Oct 2022. Bottling: Nov 2022. The red Teix wine is the perfect companion for truffled mortadella and young raw‑milk cheeses. It also pairs wonderfully with bruschetta topped with a variety of ingredients, simple pasta with a superb tomato sauce made from the best, sweetest tomatoes you can find, or on its own.
