This C by Cabriz is a perfectly amiable sparkling wine – it doesn't exactly whisk you away on a complex journey, but it certainly delivers on its promise. The pale yellow hue suggests a pleasant liveliness, and while the bubbles are persistent, they’re more of a comforting presence than a demanding challenge to the nose. Dominating aromas of pastry clearly point to a sweet character, occasionally leaning towards a straightforward simplicity. Thankfully, the wine retains a good freshness and a vibrant finish, suggesting it’s a sparkling wine that doesn’t give up easily. Ideal for balancing out the sweetness with some fresh cheeses or, naturally, a good pastel de nata.
