The careful hand-harvesting ensures only the finest fruit makes the cut, and the cold, pre-fermentation maceration really unlocks the character of these beautiful grapes. A year in French oak has polished it with a wonderfully smooth texture and complex aromas. Seriously, it’s fantastic with game or earthy mushroom dishes – a truly memorable pairing.
