Hand‑picked at optimal ripeness, the grapes are destemmed, crushed and vinified using a careful maceration that extracts colour, tannins and aromas from the skins, complemented by continuous punch‑over during fermentation. This takes place in vats at a controlled temperature between 28–30 °C until the desired Baumé level is reached. At this stage, grape brandy is added, giving rise to a fortified wine. The result is a high‑quality wine obtained by blending vintages from several years, achieving a complementary range of organoleptic characteristics typical of aged tawny style.
