Calém O Porto Cálem 10‑Year‑Old Tawny is a wine that reflects the art of blending, resulting from a carefully curated combination of wines aged in oak casks, averaging ten years in age. Hand‑picked at optimum ripeness, the grapes are destemmed, crushed and vinified using a meticulous maceration that extracts colour, tannins and aromas from the skins, complemented by frequent punch‑overs during fermentation. The process takes place in vats at a controlled temperature between 28‑30 °C until the desired Baumé level is reached. At this stage, brandy (the “beneficio”) is added, producing a fortified wine of high quality. The final product is achieved by blending vintages from different years, creating a complementary range of organoleptic characteristics typical of aged tawny style wines. **Recommendations** Its velvety texture and distinctive aromatic expression shine particularly well with main dishes that include dried fruits.
