This “Camaleão” – a sparkling wine that looks like it’s stepped straight out of an Asian restaurant – is a reliably good choice for any oven-roasted meat. The careful, low-pressure pressing process clearly favours Alvarinho, and the 12 months spent in French oak has given it a refined elegance with delicious fruit notes; a truly elegant accompaniment, perhaps alongside some perfectly cooked duck.
