Caminhos Cruzados DOP Dão. Vines: Located in the Terras de Senhorim sub‑region, between the Dão and Mondego rivers, planted between 400 m and 500 m on granite soils, with an average age of 30 years. Vinification: Manual harvest in 15‑kg baskets. Manual selection on a choice mat. After de‑stemmed and crushed, the must is sent to a pneumatic press where the juice is separated from the skins, then subjected to static decantation for clarification. Aging: 12 months in French oak barrels, mostly new. Winemakers: Carla Rodrigues, Carloto Magalhães and Manuel Vieira. Chemical Analysis: pH : 3.22 Total Acidity : 5.9 g L⁻¹ Residual Sugar : < 2 g L⁻¹ Food Pairing: Oven‑roasted fish, roasted goat, soft‑pasted cheeses.
