This Campolargo Termeão, hailing from the Bairrada, is a delightful reminder that tradition and modern technique can absolutely harmonise. The fermentation in slate lagares, aided by mechanical treading, really lets the character of the Castelão and Touriga Nacional grapes shine through with remarkable intensity. A subtle hint of old oak adds a delicate spice note, beautifully balancing the rustic nature of the grapes with a surprisingly refined finish. Seriously, it’s perfect with a good grilled beef or, let’s be honest, a cracking suckling pig.
