Fermentation took place in Seguin Moreau oak barrels with French oak discs and acacia closures – a welcome touch of rustic charm, I might add – alongside tight temperature control. The consistent "batonnage" throughout aging certainly contributes to the complex aromatics, delivering a white wine perfectly suited to oysters and seafood – a pairing that’s a timeless classic.
