Description

Pulp removal, gentle crushing and thermal shock, followed by a period of pre‑fermentative cold soaking for about 12 to 24 hours. After that the pomace was transferred to wide, low fermentation tanks where it fermented for roughly 10 days at temperatures between 24 °C and 26 °C. Malolactic fermentation took place naturally, finishing at the end of December when the wine underwent this oak fermentation. The wine was then aged for 12 months in new French oak barrels.
