Cartuxa This wine links its quality to the name of the Cartheduian monks who, since 1598, have led a solitary life of prayer at the Convent of Santa Maria Scala Coeli in Évora. It was first produced in 1986. DOC Alentejo – Évora. **Soil type**: Granitic. **Vinification**: Made from the varieties Aragonês, Trincadeira, Alicante Bouschet, among others, grown in the vineyards of the Fundação Eugénio de Almeida. When the grapes reach the ideal ripeness, they are harvested and taken to the cellar where the process begins with complete de‑stemming and a gentle crush. The grapes are then fermented separately in stainless‑steel tanks at 27 °C, followed by a prolonged post‑fermentation maceration.
