Cartuxa This wine links its quality to the name of the Carthusian monks who, since 1598, have led a life of solitary prayer in the Santa Maria Scala Coeli convent in Évora. It was first produced in 2021. DOC Alentejo – Évora Soil type: Granite Vinification: The Cartuxa rosé was made from two plots of Touriga Nacional planted in the vineyards of the Fundação Eugénio de Almeida. The grapes were hand‑picked, cooled to 14 °C before being fully destemmed and visually selected. After a gravity‑driven pressing, only the low‑pressure, run‑off fraction of the must was chosen for fermentation in stainless‑steel tanks and barrels – 10 % of the batch fermented in used barrels, enhancing volume and creaminess. No malolactic fermentation was carried out. The wine rested on fine lees for nine months with regular stirring. Enological team: Pedro Batista and Duarte Lopes.
