Cartuxa This wine links its quality to the name of the Carthusian monks who, since 1587, have led a solitary life of prayer at the Monastery of Santa Maria Scala Coeli in Évora. It is produced from a meticulous selection of grape varieties grown in the oldest plots of the Eugénio de Almeida Foundation and was first made in 1987. **DOC:** Alentejo – Évora. **Soil type:** Granitic. **Vinification:** The wine is made from carefully selected grapes—Alicante Bouschet, Aragonez, and Cabernet Sauvignon—planted in the oldest vineyards of the foundation. When the grapes reach optimal ripeness, they are harvested and taken to the cellar where the process begins with full destemming and gentle crushing. The grapes are fermented separately in stainless‑steel tanks and French oak barrels at 27 °C, followed by 15 days of maceration.
