Casa da Passarella A DOC wine from the Dão sub‑region of Serra da Estrela. Oenólogo Encruzado is made from one of the most iconic grapes of the Dão, known for its freshness, versatility and longevity. A brief pre‑fermentative maceration is followed by gentle pressing. After natural decantation, 25 % of the must ferments in a new oak barrel and the remaining 75 % in a cement tank, where it remains on‑lies for six months. Allergen information: sulphites present.
