This Casa de Cadaval Pinot Noir is a delightfully straightforward expression of the grape – you really get a sense of what a Pinot Noir *should* be. Harvested early, in mid-August, it retains a remarkable freshness and elegance, with prominent notes of blackberry, cherry, and a subtle hint of spice that speaks directly to the terroir of the Tejo region. A week of maceration gently coaxed out the best of the variety, resulting in a silky-smooth wine with remarkable vibrancy, further enhanced by ageing in used French oak barrels. Absolutely sublime with duck or a good Serrano ham – a truly refined pairing.
