The grapes are hand‑picked and gently pressed, followed by fermentation in stainless steel. The second fermentation takes place in the bottle, where the wine ages on the lees for 24 months, developing a fine, persistent bubble and a creamy, refined texture. Delicate aromas of citrus and flowers lead to a fresh and complex palate, with vibrant acidity and a mineral character reflecting the Atlantic influence and the clay‑calcareous soils of the region.
