Regular “batonnage” (lees stirring) only added to the complexity, resulting in a burst of white plum and citrus notes, with a delightful orange marmalade nuance. It’s utterly captivating, and pairs wonderfully with a perfectly grilled fish with lemon, showcasing that characteristic Green Wine fizz.
