This Cascale Ícone is a delightfully chaotic affair – a true “natural” wine experience where Syrah takes centre stage. It seems the eels had a bit of a feast, with the grapes crushed with considerable force, and the fermentation sparked spontaneously over twelve days in a tank imbued with the wisdom of the Beira Interior terroir. Following ten months aging in wood, it’s said to pair exquisitely with aged cheeses.
