“This Cascas wine is a striking illustration of the Atlantic’s constant influence on its alluvial soils. Harvested early, in the third week of September with the aid of mechanical harvesting – a nod to Fernão Pires’s approach – the Vital and Chardonnay grapes arrive swiftly at the winery. A fermentation at a cool 14°C, followed by extended aging in tank, delivers a wonderfully fresh and mineral character, clearly echoing the region’s distinctive limestone notes. It’s a fantastic pairing with grilled fish or fresh oysters, designed to heighten their natural salinity.”
