This wine from Cascas clearly had a rather rebellious start – wild-fermented and foot-stomped straight into the vat, as if the arrival of the grapes was a defiant act. The Atlantic influence, with its alluvial and limestone soils, lends a distinct saline and mineral character, reminiscent of a rainy day in Lisbon. The Castelão and Aragonez provide structure, while the Syrah adds aromatic complexity that’s certainly worth investigating. Pairs beautifully with grilled fish or, perhaps, a robust Iberian ham.
