This fascinating wine is a blend of Sauvignon Blanc, Grechetto, Traminer, Semillon and Riesling, affected by Botrytis cinerea (noble rot). Morning mists and the local micro‑climate encourage the development of this rot, which reduces the grapes’ water content. The resulting concentration of sugars and aromas gives the Muffato its special and unmistakable flavour. The Antinori family has devoted itself to wine production for more than six hundred years. Since 1385, Giovanni di Piero Antinori became a member of the Arte Fiorentina dei Vinattieri. Over its long history, spanning 26 generations, the family has always managed this activity directly, making innovative and sometimes bold choices, yet always maintaining an unaltered respect for tradition and territory. Castello della Sala lies in Umbria, not far from the border with Tuscany, about 18 kilometres from the historic town of Orvieto. The castle’s lands, an imposing medieval manor house, extend over 500 hectares, 170 of which are planted with vines, midway between the Paglia River and the summit of Monte Nibbio. Castello della Sala was built in 1350 for Angelo Monaldeschi della Vipera, whose family had come to Italy on the heels of Charlemagne in the 9th century. Castello della Sala is a highly suitable area for the production of white wines, with one exception: Pinot Noir, which finds in this terroir the ideal conditions to express itself at its best. The area is characterised by soil that tends to be clay‑eyed, limestone, and rich in fossil shells, with vines well exposed to the sun and excellent thermal amplitudes. (image merely illustrative)
