Chateau Changyu Moser XV, the world’s first Blanc de Noir Cabernet Sauvignon aged in French barrels What began as an experiment has become a historic first: a barrel‑aged version of our Blanc de Noir Cabernet Sauvignon. We loved the stainless‑steel version so much that we decided to age it in oak. After countless barrel trials in the cellar, we grew increasingly confident that this wine would be truly spectacular – and it indeed was! All the qualities of our other non‑wooded Blanc de Noir Cabernet Sauvignon were refined by a subtle 12‑month maturation in barrels. - Early harvest of healthy clusters at 23 °Brix. Immediate pressing of the unripened grapes for the white Cabernet Sauvignon. - Aging in new French barrels (Nadilie and Vicard) for 12 months, with a small proportion blended back with stainless steel. - Cultivation and blending under the close supervision of Lenz M. Moser, Head Winemaker of Château Changyu Moser XV, who spent the entire harvest season in Ningxia.
