Château Gilette Sauternes Créme de Tête 1961 is produced following the original methods introduced in the 1930s by René Médeville, grandfather of the current owner Julie Gonet‑Médeville. The vineyards are cultivated organically, with ploughing that enriches the soil. The grapes, affected by Botrytis cinerea (noble rot), thrive under the prevailing microclimate of Sauternes and Preignac. During harvest, 3 to 8 passes are made to hand‑pick grapes that are perfectly “torré” or still in the noble‑rot stage.
