Château Gilette Sauternes Créme de Tête 1979 is produced following the original techniques introduced in the 1930s by René Médeville, the grandfather of the current owner, Julie Gonet‑Médeville. The vineyards are cultivated organically, with ploughing enriched with organic matter. The grapes, susceptible to Botrytis cinerea (noble rot), benefit from the prevailing microclimate of Sauternes and Preignac. During harvest, between three and eight passes are made to pick berries that are perfectly “roasted” or in a state of noble rot.
