Château Mouton Rothschild 2017 is a blend of 90% Cabernet Sauvignon, 9% Merlot and 1% Petit Verdot, hand‑picked and subjected to a rigorous selection of bunches and berries so that only those meeting the ideal conditions are vinified. It ferments in wooden vats and ages in new French oak barrels for about 20 months. The wine then spends several months in the enormous Château Mouton Rothschild cellar, where the temperature stays constantly between 12 °C and 15 °C, humidity is 80–90 %, and light is minimal or absent – optimal conditions for bottle aging and storage. Château Mouton Rothschild is considered by many to be one of the world’s best reds. Its wines are intense, tremendously elegant and complex, with a tremendous aging potential – a true jewel of the Old World. In 2017 there was no frost in Mouton, only a slight one in d’Armailhac. Winemaker Philippe Dhalluin noted that the early dry period ensured the bunches were composed of many small berries. In fact, the Merlot was somewhat stressed and suffered a little, so Dhalluin felt it was more of a Cabernet year here in Pauillac. Yields fell in 2016 by only about 10 %. Petit Mouton accounts for roughly 21 % of this year’s production. The final blends were made in mid‑November because malolactic fermentation progressed so quickly.
