Château Mouton Rothschild Château Mouton Rothschild is hand‑picked and subjected to a rigorous selection of bunches and grapes so that only those that meet the ideal conditions for the future wine are vinified. It ferments in wooden vats and ages in new French oak barrels for about 20 months. The wine also spends several months in the enormous cellar of Château Mouton Rothschild. There the temperature is constantly between 12 °C and 15 °C, with humidity of 80 % to 90 % and very little or no light – optimal conditions for aging and storage of the bottles. Château Mouton Rothschild is considered by many to be one of the best reds in the world. Its wines are intense, tremendously elegant and complex, with a huge aging potential – a jewel of the Old World. In 2017 there was no frost in Mouton – only a little in d’Armailhac. Winemaker Philippe Dhalluin noted that the early dry period ensured the bunches consisted of many small berries. Indeed, the Merlot was a bit stressed and suffered somewhat, so Dhalluin felt it was more a Cabernet year here in Pauillac. Yields dropped in 2016 by only about 10 %. Petit Mouton accounts for about 21 % of this year’s production. The final blends were made in mid‑November because the malolactic fermentations progressed so quickly.
