“This wine demands a certain attitude – it’s almost a subtle invitation. Predominantly driven by Jaén (around 80%), with a touch of Tinta Pinheira, it’s a surprisingly intense wine, the result of a deliberately incomplete fermentation that fiercely protects the fresh fruit. The outcome is a remarkably crisp and vibrant wine, meticulously aged in stainless steel – a nod to Tiago Macena’s approach. It pairs wonderfully with a generous chunk of fresh sheep’s cheese, or perhaps a perfectly charred barbecue rib.”
