Reception with total destemming and immediate crushing; the grapes are fermented by variety so that a rigorous selection can be made, which will then form the blend. Fermentation takes place in small-capacity stainless steel vats at temperatures around 24ºC. Gentle, controlled macerations aim to produce elegant, aromatic wines.
